- 2 c. instant pancake baking mix
- 1 c. diced apple
- 1/2 c. chopped dried cherries
- 1 1/2 c. Daisy® Cottage Cheese, divided
- 1 tsp. dried cinnamon
- 1/2 c. chopped toasted pecans
Spray a large non-stick skillet and heat to medium heat. In a large mixing bowl, prepare the pancake mix according to the package directions. To the prepared pancake batter, add the apples, cherries, 1/2 c. cottage cheese and cinnamon; mix well.
Place about 2 Tbsp. of pancake mixture on the skillet. Cook the pancakes on first side until the mixture bubbles (about 2 to 3 minutes). Turn the pancake over and continue cooking an additional 1 to 2 minutes, or until lightly browned. Remove from the heat and set aside; keep warm.
Repeat with remaining pancake batter. Place about 3 pancakes on plate. Top with about 2 large Tbsp. of cottage cheese and sprinkle with about 1 Tbsp. of pecans. Drizzle with maple syrup, if desired. Repeat with remaining pancakes.
