Recipe Ingredients

  • 1 (10-ounce) bag frozen riced cauliflower
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 cup all-purpose flour, divided
  • 1 tsp. kosher salt
  • 1/4 tsp. freshly ground black pepper
  • 2 large eggs, lightly beaten
  • 2 cups Italian breadcrumbs
  • 2 cups marinara sauce, warmed

Recipe Directions

  1. Cook cauliflower according to package directions. Mix hot cauliflower, 1/4 cup mozzarella, Parmesan, 1 tablespoon flour, salt and pepper together until combined.
  2. Portion cauliflower mixture into roughly 2-tablespoon-size balls. Make an indent in center of cauliflower ball and fill with a few teaspoons of mozzarella. Pinch cauliflower mixture over mozzarella to cover.
  3. Toss cauliflower balls in flour, eggs, then into breadcrumb mixture, shaking off any excess.
  4. Preheat air-fryer to 400°F. Working in batches, place cauliflower balls in air-fryer basket and coat with olive oil cooking spray. Cook, flipping cauliflower balls halfway through, until golden-brown and crisp, about 8 to 10 minutes. Repeat with remaining cauliflower balls.
  5. Serve with marinara and enjoy.

  1. Have question: Directions state add Parmesan, there is no Parmesan listed in Ingredients?
    Please clarify. Would love to try these but need this corrected.
