- 1 cup Daisy Cottage Cheese
- 8 large eggs
- 1/4 teaspoon salt
- 1/2 teaspoon cracked black pepper
- 1/2 teaspoon minced garlic
- 1/2 cup fresh spinach, sliced
- 1/4 cup cherry tomatoes, diced
Recipe Directions
- Preheat oven to 300°F. Coat cupcake tin or silicone mold with nonstick cooking spray.
- Blend cottage cheese, eggs, salt, and pepper in a blender until smooth. Stir in garlic, spinach, and tomatoes. Fill tins to brim with mixture.
- Bake 25-28 minutes or golden brown and dry. Cool 5 minutes before unmolding and serving.
