Recipe Ingredients

  • 1 cup Daisy Cottage Cheese
  • 8 large eggs
  • 1/4 teaspoon salt
  • 1/2 teaspoon cracked black pepper
  • 1/2 teaspoon minced garlic
  • 1/2 cup fresh spinach, sliced
  • 1/4 cup cherry tomatoes, diced

Recipe Directions

  1. Preheat oven to 300°F. Coat cupcake tin or silicone mold with nonstick cooking spray.
  2. Blend cottage cheese, eggs, salt, and pepper in a blender until smooth. Stir in garlic, spinach, and tomatoes. Fill tins to brim with mixture.
  3. Bake 25-28 minutes or golden brown and dry. Cool 5 minutes before unmolding and serving.
