Recipe Ingredients

  • 2 teaspoons olive oil
  • 1 garlic clove, minced
  • 1 pound frozen large shrimp, peeled and deveined, thawed
  • Kosher salt and freshly ground black pepper
  • 4 frozen loaves naan or pita, thawed
  • 2 cups shredded mozzarella cheese
  • 1 (12-ounce) jar marinated artichoke hearts quartered, drained and halved
  • 1 cup frozen chopped spinach, thawed and drained
  • crushed red pepper flakes, for garnish
  • chopped fresh oregano, plus more for garnish

Recipe Directions

  1. Preheat oven to 400°F and line a rimmed baking sheet with parchment paper or aluminum foil. Heat oil in large skillet over medium-high heat. Add garlic and cook until fragrant, about 30 seconds. Add shrimp and cook, stirring occasionally, until shrimp turns pink, about 1 to 2 minutes. Season with salt and pepper.
  2. Place naan on a rimmed baking sheet. Sprinkle cheese evenly over each naan, leaving a 1/2-inch border. Top with an even layer of shrimp, artichokes and spinach. Bake until cheese is melted, about 5 to 8 minutes. Garnish with crushed red pepper flakes and oregano, and serve.
