Recipe Ingredients

  • 1/2 pound baby potatoes, halved
  • 4 tbsp olive oil
  • Salt and pepper, to taste
  • 2 (6 oz) salmon filets
  • 2 cups PuraVida Fire Roasted Primavera Mistura
  • Parsley, freshly chopped

Recipe Directions

  1. Preheat oven to 425°F. Toss potatoes with 2 tablespoons olive oil, salt, and pepper to taste. Once coated, arrange on a large sheet pan and bake in preheated oven for 20 minutes, checking halfway and giving them a shake.
  2. Remove the hot pan from the oven and move the potatoes to one side of the pan. Carefully arrange salmon fillets and vegetables on the sheet pan.
  3. Place pan back in the oven and cook for another 10-12 minutes, until vegetables are hot and salmon is cooked through. Top with chopped parsley and serve.
