Recipe Ingredients
- 2 scallions
- Ginger slices
- 9 shrimp (peeled, save the shells and heads)
- 1 tablespoon butter
- 2 cups chicken stock
- 1/4 cup shimeji mushrooms
- 1/4 cup shiitake mushrooms
- 1/4 cup frozen green peas
- 1 tablespoon miso paste
- 1/2 cup rolled oats
- 1 bok choy
- Sesame seeds
- 1 tablespoon cooking oil
Recipe Directions
- Peel the shrimp, while saving the shells and heads.
- In a sauté pan, heat cooking oil and lightly stir-fry scallions and ginger. Add the shrimp shells and heads, stir-frying until fragrant with a touch of butter to bring out the umami.
- Pour in 1 cup of chicken stock and let it simmer to extract the flavors.
- Add the mushrooms, shrimp, and peas, then stir in miso paste. Simmer for another 3 minutes.
- Stir in the oats and cook until softened, about 3-5 minutes.
- Chop in the bok choy and cook for an additional minute.
- Serve immediately, garnished with sesame seeds.
