Recipe Ingredients
- ½ lb linguine (or spaghetti)
- 2 cups PuraVida Fire Roasted Primavera Mistura
- ¼ cup extra virgin olive oil
- 4 cloves garlic, minced
- ½ cup parmesan cheese, shredded
- Salt, to taste
- ¼ tsp red pepper flakes
Recipe Directions
- Bring a large pot of cold water to a boil over high heat, then salt it generously.
- Cook pasta in boiling water, stirring occasionally, deduct 1-2 minutes from the package instructions.
- While the pasta cooks, combine the garlic, olive oil, red pepper flakes, and a pinch of salt in a large skillet and warm over low heat, stirring occasionally, until garlic softens and turns golden.
- Turn heat up to medium and add vegetables. Cook until just heated through, about 5-6 minutes.
- When the pasta is ready, scoop out 1/2 cup pasta cooking water and save, and drain the pasta. Add the pasta and half of the reserved water to the garlic mixture. Mix well. Add seasoning and parmesan to taste, and serve.
