Recipe Ingredients
- 2/3 cup Daisy® Cottage Cheese
- 2 large eggs, separated
- 1 tsp vanilla extract
- 1 tbsp sugar
- 6 tbsp water
- 1 cup oat flour
- 1/2 tsp baking powder
Recipe Directions
- Heat waffle iron on medium setting.
- Add cottage cheese, egg yolks, vanilla, sugar, water, oat flour, and baking powder to a blender. Blend until batter is smooth. Pour into bowl and set aside.
- Separately, beat egg whites to soft peaks. Gently fold into batter until evenly combined with no streaks remaining.
- Coat waffle iron with non-stick spray. Pour a little less than ½ cup batter into iron and cook until golden brown. Serve immediately.
Prep Tip
Oats may be blended in a food processor to make oat flour. Pulse until oats resemble flour.
