Recipe Ingredients
- 1 box Mrs. T's Pierogies Classic Cheddar
- 1 ½ tbsp olive oil
- 3 cloves garlic, minced
- 1 small yellow onion, diced
- 1 tsp Italian seasoning
- ¾ tsp fine sea salt
- 1 tsp fresh thyme, chopped (or dried)
- 8 cups vegetable broth
- 2 cups pumpkin, cubed (or sweet potato or butternut squash)
- 2 cups green cabbage, chopped
- 1 cup green beans, chopped
- 1 bunch kale, destemmed and chopped
- ¼ cup parsley, chopped
Recipe Directions
- In a large pot over medium heat, heat up half of the olive oil. Once hot, add in cabbage and cook for five minutes, until it starts to brown.
- Meanwhile, in a large skillet, add in remaining olive oil and brown the pierogies on each side for five minutes (do not need to be heated all the way through).
- Add in onion, pumpkin, green beans, garlic, and seasonings. Start to combine and sauté for 6 to 8 minutes, until the veggies begin to soften.
- Once vegetables are tender, add in the broth and bring to a simmer. Cook until vegetables are fork-tender and ready to eat. Stir in kale, parsley, and pierogies. Cook for a few more minutes to heat through and enjoy.
