Recipe Ingredients

  • 1 box Mrs. T's Pierogies Classic Cheddar
  • 1 ½ tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small yellow onion, diced
  • 1 tsp Italian seasoning
  • ¾ tsp fine sea salt
  • 1 tsp fresh thyme, chopped (or dried)
  • 8 cups vegetable broth
  • 2 cups pumpkin, cubed (or sweet potato or butternut squash)
  • 2 cups green cabbage, chopped
  • 1 cup green beans, chopped
  • 1 bunch kale, destemmed and chopped
  • ¼ cup parsley, chopped

Recipe Directions

  1. In a large pot over medium heat, heat up half of the olive oil. Once hot, add in cabbage and cook for five minutes, until it starts to brown.
  2. Meanwhile, in a large skillet, add in remaining olive oil and brown the pierogies on each side for five minutes (do not need to be heated all the way through).
  3. Add in onion, pumpkin, green beans, garlic, and seasonings. Start to combine and sauté for 6 to 8 minutes, until the veggies begin to soften.
  4. Once vegetables are tender, add in the broth and bring to a simmer. Cook until vegetables are fork-tender and ready to eat. Stir in kale, parsley, and pierogies. Cook for a few more minutes to heat through and enjoy.
