Recipe Ingredients

  • 1 pkg. Green Giant® Mediterranean Style Riced Veggie Blends
  • 1 (14 ½ oz.) can garbanzo beans, drained
  • 2 cups baby kale
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives
  • 2 breasts from a rotisserie chicken, sliced (optional)
  • ½ cup crumbled feta cheese
  • ¼ cup pine nuts
  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 1 clove garlic, minced
  • 1 tsp. salt
  • ½ tsp. freshly ground pepper
  • 1/2 lemon, sliced
  • Additional salt and pepper, for serving

Recipe Directions

  1. Prepare Mediterranean Style Riced Veggie Blends as directed on pack.
  2. Divide kale between two medium serving bowls.
  3. Divide package of Veggie Blends between the two bowls, creating a mound in each.
  4. Arrange mounds of garbanzo beans, cherry tomatoes, olives and chicken breast (if using) around bowl.
  5. Sprinkle with feta cheese and pine nuts.
  6. Combine olive oil, red wine vinegar, garlic, 1 tsp. salt and ½ tsp. pepper in a lidded container and shake well.
  7. Pour 1-2 Tbsp., over each bowl or to taste. (You should have some leftover).
  8. Sprinkle with a little more salt and pepper and serve with lemon slices.
