Recipe Ingredients
- 2 cups cottage cheese
- 3 tablespoons maple syrup
- 2 tablespoons lemon juice
- 1 1/2 teaspoons pure vanilla extract
- 4 strawberries, hulled and sliced
- 4 fresh mint sprigs, for garnish
- 1 lemon, zested, for garnish
Recipe Directions
- Combine cottage cheese, maple syrup, lemon juice and vanilla in a food processor. Blend, scraping down the sides as needed, until smooth, about 30 seconds.
- Divide cottage cheese mixture evenly between 4 small serving glasses. Refrigerate for at least 2 hours, or overnight, until set.
- Garnish with strawberries, mint and lemon zest. Serve and enjoy.
