Recipe Ingredients

  • 2 cups cottage cheese
  • 3 tablespoons maple syrup
  • 2 tablespoons lemon juice
  • 1 1/2 teaspoons pure vanilla extract
  • 4 strawberries, hulled and sliced
  • 4 fresh mint sprigs, for garnish
  • 1 lemon, zested, for garnish

Recipe Directions

  1. Combine cottage cheese, maple syrup, lemon juice and vanilla in a food processor. Blend, scraping down the sides as needed, until smooth, about 30 seconds.
  2. Divide cottage cheese mixture evenly between 4 small serving glasses. Refrigerate for at least 2 hours, or overnight, until set.
  3. Garnish with strawberries, mint and lemon zest. Serve and enjoy.
