Recipe Ingredients
- 3 large peaches, pitted, peeled and thinly sliced, divided
- 1 1/2 cup frozen vanilla bean yogurt
- 1/4 cup mascarpone
- 1/2 cup whole milk
- 1 1/2 cups white chocolate melting wafers
- Assorted edible flowers, for garnish, optional
Recipe Directions
- Combine 2 peaches, frozen yogurt, mascarpone and milk in a blender and blend until smooth, about 30 seconds. Stir in remaining peach slices until combined. Pour peach mixture evenly between a 10-slot popsicle mold, filling each three-quarters full.
- Insert popsicle sticks and cover with popsicle mold lid. Freeze for at least 4 hours, or until solid.
- Place melting wafers in small microwave-safe bowl. Microwave chocolate in 30-second increments, stirring between, until melted. Transfer melted wafers to a piping bag and cut a small tip from the corner.
- Remove popsicles from molds and place on a parchment paper lined rimmed baking sheet. Drizzle popsicles evenly with melted wafters. Quickly press edible flowers decoratively onto each popsicle. Serve immediately and enjoy.
