Recipe Ingredients
- 2 teaspoons olive oil
- 1 pound frozen ground chicken or frozen ground turkey, thawed
- 2 cloves garlic, minced
- 1 (1/2-inch) knob ginger, minced
- 4 cups tri-color coleslaw mix
- 1/4 cup low-sodium soy sauce
- 4 cups cooked long-grain white rice, kept hot
- Toasted sesame seeds, for garnish
- 2 green onions, thinly sliced
Recipe Directions
- Heat oil in a large skillet over medium-high heat. Add ground chicken and cook for about 6 minutes, breaking up into small crumbles with a wooden spoon as it cooks, until chicken is cooked through and begins to brown. Add garlic and ginger, and cook until fragrant, about 30 seconds.
- Add coleslaw mix and soy sauce, and cook, stirring frequently, until coleslaw mix is crisp-tender, about 3 minutes.
- Divide rice between bowls. Top with chicken mixture and garnish with sesame seeds and green onions. Serve and enjoy.
