Recipe Ingredients

  • 2 teaspoons olive oil
  • 1 pound frozen ground chicken or frozen ground turkey, thawed
  • 2 cloves garlic, minced
  • 1 (1/2-inch) knob ginger, minced
  • 4 cups tri-color coleslaw mix
  • 1/4 cup low-sodium soy sauce
  • 4 cups cooked long-grain white rice, kept hot
  • Toasted sesame seeds, for garnish
  • 2 green onions, thinly sliced

Recipe Directions

  1. Heat oil in a large skillet over medium-high heat. Add ground chicken and cook for about 6 minutes, breaking up into small crumbles with a wooden spoon as it cooks, until chicken is cooked through and begins to brown. Add garlic and ginger, and cook until fragrant, about 30 seconds.
  2. Add coleslaw mix and soy sauce, and cook, stirring frequently, until coleslaw mix is crisp-tender, about 3 minutes.
  3. Divide rice between bowls. Top with chicken mixture and garnish with sesame seeds and green onions. Serve and enjoy.
