Recipe Ingredients

  • 1 large egg room temperature
  • 1/3 cup extra virgin olive oil
  • 2/3 cup milk
  • 1 1/2 cups tapioca flour
  • 1/4 cup finely shredded Asiago
  • 1/2 cup Daisy Cottage Cheese
  • 1/2 teaspoon salt

Recipe Directions

  1. Preheat oven to 400°F. Spray mini muffin tins with non-stick spray.
  2. Place all ingredients into a blender and process until smooth, scraping as necessary.
  3. Pour into muffin tin almost to the top.
  4. Bake 15-20 minutes, until puffed and slightly browned.
