Recipe Ingredients

  • 2/3 cup Daisy® Cottage Cheese
  • 2 large eggs, separated
  • 1 tsp vanilla extract
  • 1 tbsp sugar
  • 6 tbsp water
  • 1 cup oat flour
  • 1/2 tsp baking powder

Recipe Directions

  1. Heat waffle iron on medium setting.
  2. Add cottage cheese, egg yolks, vanilla, sugar, water, oat flour, and baking powder to a blender. Blend until batter is smooth. Pour into bowl and set aside.
  3. Separately, beat egg whites to soft peaks. Gently fold into batter until evenly combined with no streaks remaining.
  4. Coat waffle iron with non-stick spray. Pour a little less than ½ cup batter into iron and cook until golden brown. Serve immediately.

Prep Tip

Oats may be blended in a food processor to make oat flour. Pulse until oats resemble flour.
