Recipe Ingredients

  • 20 Mrs. T’s Classic Onion Pierogies
  • 3 tbsp oil, divided
  • 1 lb ground turkey
  • 1/3 cup plain bread crumbs
  • 1 large egg
  • 1 tsp kosher salt
  • 1/2 tsp garlic powder
  • 1/2 tsp freshly ground black pepper
  • 1 (8-ounce) Brie wheel, cut into 1/4-inch wedges
  • 1 cup whole cranberry sauce
  • 1 cup packed baby arugula

Recipe Directions

  1. Heat 2 tablespoons of oil in a large skillet over medium heat. Working in batches, if necessary, add pierogies and cook, turning halfway though, until crisp, light golden-brown and fully heated through, about 8 minutes. Repeat with remaining pierogies.
  2. Combine turkey, bread crumbs, egg, salt, garlic powder and pepper in a large bowl until just combined. Form into twelve 3 1/2-inch patties.
  3. Heat remaining oil in large skillet or griddle over medium-high heat. Working in batches, if necessary, cook patties until golden-brown and internal temperature reaches 165°F, about 1 to 2 minutes per side. Repeat with remaining patties.
  4. Top half the pierogies with one patty, 1 slice of cheese, a few teaspoons of cranberry sauce and arugula. Top with remaining pierogies and secure with toothpicks. Serve and enjoy.
