Recipe Ingredients

  • 1 cup fresh pineapple chunks
  • 1 small mango, peeled and cut into 3/4-inch chunks
  • 2 teaspoons chopped fresh cilantro
  • 1 lime, juiced, divided lime, juiced, divided
  • Chili-lime seasoning for garnish
  • 2 Delimex® Beef & Cheese Taquitos
  • 2 Delimex® Chicken & Cheese Taquitos
  • 1/2 cup store-bought or homemade fresh tomato salsa
  • 1/2 cup store-bought or homemade guacamole

Recipe Directions

  1. Combine pineapple, mango, cilantro and half the lime juice in a small bowl. Set aside.
  2. Heat air-fryer to 350°F. Place taquitos in an even layer in air-fryer basket. Cook for 7 to 8 minutes, shaking basket halfway through, until fully heated through. Slice taquitos in half.
  3. Divide taquitos, salsa, guacamole and pineapple mixture evenly between each section of 2 bento boxes. Garnish pineapple mixture with chili-lime seasoning and drizzle remaining lime juice over guacamole.
  4. Close lid and serve at room temperature.
