Recipe Ingredients
- 24 Rosina Homestyle Meatballs, thawed
- 2 large red bell pepper, cut in 1” squares
- 1 large red onion, cut into petals
- 2 cups pineapple chunks
For glaze:
- 1/2 cup apricot preserves
- 1/4 cup BBQ sauce
- 2 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon garlic powder
Recipe Directions
- Soak bamboo skewers in water for 30 minutes.
- Whisk ingredients in a pan over medium heat for 3–5 minutes until thickened, then set aside.
- Alternate thawed meatballs, veggies, and pineapple on skewers.
- Place on medium heat for 10 minutes, rotating occasionally.
- Brush glaze over skewers twice, once at the start and again 2 minutes before pulling them off (or when internal temp hits 165°F).
