Recipe Ingredients

  • 24 Rosina Homestyle Meatballs, thawed
  • 2 large red bell pepper, cut in 1” squares 
  • 1 large red onion, cut into petals
  • 2 cups pineapple chunks

For glaze:

  • 1/2 cup apricot preserves
  • 1/4 cup BBQ sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder

Recipe Directions

  1. Soak bamboo skewers in water for 30 minutes.
  2. Whisk ingredients in a pan over medium heat for 3–5 minutes until thickened, then set aside.
  3. Alternate thawed meatballs, veggies, and pineapple on skewers.
  4. Place on medium heat for 10 minutes, rotating occasionally.
  5. Brush glaze over skewers twice, once at the start and again 2 minutes before pulling them off (or when internal temp hits 165°F).
