For Cheese Sauce
- 2 cups shredded pepper jack cheese
- 2 teaspoons cornstarch
- 1 1/2 cups half-and-half
- Kosher salt, to taste
For Burgers and Assembly
- 1 pound ground chicken
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 4 (6-inch) flour tortillas
- 4 slices cheddar cheese
- 2 cups shredded lettuce
- 2 plum tomatoes, seeded and chopped
- 1/2 small red onion, chopped
- 1/4 cup dill pickle chips
Recipe Directions
For Cheese Sauce
- Toss pepper jack and cornstarch together in small saucepan. Pour in half-and-half. Cook, stirring occasionally, over medium-high heat until cheese is melted and sauce is smooth, about 3 to 5 minutes. Set aside for serving with tacos.
For Burgers and Assembly
- Heat griddle or large cast-iron skillet over medium-high heat. Divide chicken into 4 equal balls. Working in batches if necessary, place the balls 4-inches apart on griddle. Season with salt and pepper. Place tortillas on top of chicken balls and press down, using a spatula, to flatten the chicken into the shape of the tortilla. Cook until chicken is golden-brown and fully cooked, about 3-4 minutes.
- Flip tacos over and top with cheddar. Continue to cook until the cheese is melted, about 1 minute. Top tacos with lettuce, tomatoes, red onion and pickles. Drizzle with cheese sauce, and serve.
TIP
You can substitute chicken with ground beef!
