Chicken Tacos

  • 6 Gardein® Seven Grain Crispy Tenders
  • ¼ cup barbecue sauce
  • 3 almond flour tortillas

Pineapple Salsa

  • ¼ red pepper, diced
  • 1 cup diced pineapple
  • 3 tablespoons fresh cilantro, chopped
  • Juice from ½ lime
  • Salt to taste
  • 2 small jalapenos, seeded and diced (use one for less spice)

Recipe Directions

  1. Make the Pineapple Salsa: In a bowl, mix together the diced red pepper, pineapple, cilantro, lime juice, and jalapenos. Add salt to taste and set aside.
  2. Cook the Gardein Plant-Based Chicken Bites: Preheat the air fryer to 400°F (200°C). Place the chicken bites in the air fryer basket in a single layer. Cook for 14-16 minutes, shaking the basket halfway through. Once done, toss the cooked chicken bites with the barbecue sauce until well-coated.
  3. Warm the Tortillas: While the chicken bites are cooking, heat the almond flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, until they are pliable and warm.
  4. Assemble the Tacos: Place the BBQ chicken bites on each tortilla. Top with a generous spoonful of the pineapple salsa. Serve: Serve the tacos immediately and enjoy the leftover pineapple salsa with chips!
