Recipe Ingredients
For tacos:
- 1 pound frozen lean ground pork or ground chicken, thawed
- 1 cup tri-color coleslaw mix, finely chopped
- 4 green onions, thinly sliced
- 1 tablespoon low-sodium soy sauce
- 2 1/2 teaspoons ginger paste
Recipe Directions
- For tacos: Mix pork, coleslaw mix, green onion, soy sauce, ginger, garlic and sesame oil in a large bowl until combined. Spread pork mixture evenly over each tortilla.
- Heat oil on a griddle or large skillet over medium-high heat. Working in batches, place tortillas, meat-side-down, on griddle and cook until the pork is golden-brown, about 3 to 4 minutes. Flip tortillas over and continue to cook until tortillas are lightly toasted, about 1 minute. Repeat with remaining tortillas.
- For slaw and assembly: While tacos are cooking, combine coleslaw, edamame, corn, cilantro and green onions, sesame oil, vinegar and sugar together until coated. Season with salt and pepper, to taste.
- Top tacos with cabbage mixture. Serve with dumpling sauce, and enjoy.
