Recipe Ingredients

For tacos:

  • 1 pound frozen lean ground pork or ground chicken, thawed
  • 1 cup tri-color coleslaw mix, finely chopped
  • 4 green onions, thinly sliced
  • 1 tablespoon low-sodium soy sauce
  • 2 1/2 teaspoons ginger paste

Recipe Directions

  1. For tacos: Mix pork, coleslaw mix, green onion, soy sauce, ginger, garlic and sesame oil in a large bowl until combined. Spread pork mixture evenly over each tortilla.
  2. Heat oil on a griddle or large skillet over medium-high heat. Working in batches, place tortillas, meat-side-down, on griddle and cook until the pork is golden-brown, about 3 to 4 minutes. Flip tortillas over and continue to cook until tortillas are lightly toasted, about 1 minute. Repeat with remaining tortillas.
  3. For slaw and assembly: While tacos are cooking, combine coleslaw, edamame, corn, cilantro and green onions, sesame oil, vinegar and sugar together until coated. Season with salt and pepper, to taste.
  4. Top tacos with cabbage mixture. Serve with dumpling sauce, and enjoy.
