Recipe Ingredients

  • 1 (18-ounce) bag frozen roasting red potatoes with onions
  • 3 tablespoons olive oil, plus extra for drizzling
  • 3 cloves garlic, minced
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon coarsely chopped fresh dill
  • 1 tablespoon coarsely chopped fresh basil
  • 1 tablespoon chopped fresh chives
  • 2 balls burrata cheese

Recipe Directions

  1. Preheat the oven to 425 degrees F. Coat a rimmed baking sheet with cooking spray. In a medium bowl, combine potatoes, 3 tablespoons oil, garlic, salt, and pepper; toss until evenly coated. Place on baking sheet in a single layer.
  2. Roast for 20 minutes, toss, and continue to roast for 15 to 20 minutes more or until golden. Place potatoes on a serving platter, sprinkle with dill, basil, and chives. Break the cheese over the potatoes and drizzle lightly with oil. Serve immediately.
