- 1 c. steel cut quick cooking oats
- 1 tsp ground cinnamon
- 1/4 c. walnut pieces
- 1 Tbsp. brown sugar
- 1 1/3 c. Daisy® Cottage Cheese
- 1/2 c. Craisins
- 1/2 c. fresh blueberries
Prepare the steel cut oats according to the package directions, with the addition of the cinnamon. Once done; cover and set the cooked oats aside.
In a 10" non-stick skillet, place the walnut pieces and brown sugar. Heat over medium heat until the sugar just begins to melt (6 to 10 minutes). Stir the sugar and walnuts constantly until all the sugar is melted (1 to 2 minutes). Immediately turn the walnuts onto a parchment lined baking sheet and cool completely.
Break the nuts apart. Place 1/4 of the cooked oats into each of four serving bowls. Top each with 1/3 c. cottage cheese, 1 to 2 Tbsp. of Craisins, 1 to 2 Tbsp. of blueberries and about 1 Tbsp. of walnut pieces. Serve immediately.
