Basque Cheesecake Ingredients

  • 12 oz. Philadelphia Cream Cheese, softened
  • 1 teaspoon lemon zest
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup heavy cream
  • 2 teaspoons cornstarch
  • 1/8 teaspoon salt

Lemon Curd Ingredients

  • 2 eggs
  • 1 egg yolk
  • 1/2 cup sugar
  • 2 teaspoons lemon zest
  • 1/4 cup lemon juice
  • 2 oz. unsalted butter, cubed
  • 1/8 teaspoon salt

Recipe Directions

Basque Cheesecake Instructions

  1. Preheat oven to 425F.
  2. Mix Philadelphia cream cheese, lemon zest, and sugar until smooth.
  3. Add eggs one at a time, mixing well after each addition.
  4. Slowly pour in heavy cream while mixing.
  5. Sift in cornstarch and salt, then mix until well combined.
  6. Line a muffin tin with parchment paper then pour in the batter up to the rim.
  7. Bake for 30 minutes, then remove from the oven to cool completely.
  8. Once cooled, serve with lemon curd in the center.

Lemon Curd Instructions

  1. In a pot, combine eggs, egg yolk, sugar, lemon zest, lemon juice and salt. Whisk until well combined.
  2. Heat pot over low heat, stirring constantly. Once slightly thickened, remove from heat then stir in butter.
  3. Set aside to cool before serving.
