Recipe Ingredients

  • 1 cup Mini candy-coated chocolate gems
  • 1/2 cup roasted peanuts, chopped
  • 1/4 cup rainbow sprinkles
  • 4 chocolate ice cream sandwiches
  • 2 cups dark chocolate melting wafers

Recipe Directions

  1. Line a rimmed baking sheet with parchment paper. Place chocolate gems, peanuts and sprinkles in 3 separate shallow bowls. Set aside.
  2. Cut each ice cream sandwich into 3 equal pieces. Insert popsicle sticks into the ice cream portion of each ice cream sandwich.
  3. Place chocolate in small microwave-safe bowl or jar. Microwave chocolate in 30-second increments, stirring in between, until melted.
  4. Coat half the ice cream sandwiches in chocolate, shaking off any excess. Dip edge of sandwiches in chocolate gems, peanuts or sprinkles until evenly coated. Place on prepared baking sheet and freeze until ready to serve.
