Recipe Ingredients
- 2 1/2 teaspoons toasted sesame oil
- 1 chicken breast, boneless, skinless, cut into 1/4-inch strips
- 1 (1/2-inch) knob ginger, minced
- 3 cloves garlic, minced
- 1 (10-ounce) bag PuraVida Fire Roasted Vegetable Mélange
- 3 tablespoons ketchup
- 2 tablespoons soy sauce
- 2 teaspoons rice wine vinegar
- Chopped green onions, for garnish
- Toasted sesame seeds, for garnish
- 4 cups cooked long grain white rice, kept warm
Recipe Directions
- Heat oil in a large wok or skillet over medium-high heat. Add chicken, and cook, stirring frequently, until golden-brown and internal temperature reaches 165°F, about 4 to 6 minutes. Add ginger and garlic, and cook, stirring frequently, until fragrant, about 30 seconds. Add vegetables and cook, stirring frequently, until vegetables are tender and fully heated through, about 4 to 6 minutes.
- Stir in ketchup, soy sauce and vinegar and cook until sauce thickens and chicken and vegetables are coated, about 2 to 3 minutes. Garnish with green onions and sesame seeds. Serve with rice and enjoy.
