Recipe Ingredients
- 1 package uncooked rigatoni pasta
- 3 cups PuraVida Vegetable Mélange
- 1/4 cup butter
- 3-4 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 1 tablespoon fresh basil
- 1/3 cup Parmesan cheese, grated
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- Salt and pepper, to taste
Recipe Directions
- Bring a large pot of salted water to a boil, and cook rigatoni according to package directions.
- Add olive oil to a skillet under medium-high heat. Add minced garlic, red pepper flakes, and PuraVida Vegetable Mélange and sauté for 2-3 minutes, or enough time to heat and have the garlic become fragrant.
- Once pasta is cooked, drain and add to the pan with the PuraVida Vegetable Mélange.
- Add butter, grated Parmesan, fresh lemon juice and sprinkle with basil to taste.
