Recipe Ingredients

  • 1 package uncooked rigatoni pasta
  • 3 cups PuraVida Vegetable Mélange
  • 1/4 cup butter
  • 3-4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 tablespoon fresh basil
  • 1/3 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • Salt and pepper, to taste

Recipe Directions

  1. Bring a large pot of salted water to a boil, and cook rigatoni according to package directions.
  2. Add olive oil to a skillet under medium-high heat. Add minced garlic, red pepper flakes, and PuraVida Vegetable Mélange and sauté for 2-3 minutes, or enough time to heat and have the garlic become fragrant.
  3. Once pasta is cooked, drain and add to the pan with the PuraVida Vegetable Mélange.
  4. Add butter, grated Parmesan, fresh lemon juice and sprinkle with basil to taste.
