Recipe Ingredients
- 1 large egg room temperature
- 1/3 cup extra virgin olive oil
- 2/3 cup milk
- 1 1/2 cups tapioca flour
- 1/4 cup finely shredded Asiago
- 1/2 cup Daisy Cottage Cheese
- 1/2 teaspoon salt
Recipe Directions
- Preheat oven to 400°F. Spray mini muffin tins with non-stick spray.
- Place all ingredients into a blender and process until smooth, scraping as necessary.
- Pour into muffin tin almost to the top.
- Bake 15-20 minutes, until puffed and slightly browned.
