- 2 (16-ounce) boxes Mrs. T’s Classic Cheddar Pierogies
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 1/2 cups whole milk
- 2 tablespoons Dijon mustard
- Kosher salt and freshly ground black pepper, to taste
- 8 ounces thinly sliced Black Forest ham, torn in half
- 2 cups shredded Gruyere cheese, divided
- Chopped fresh chives, for garnish
Recipe Directions
- Preheat oven to 400°F. Coat a 9x13-inch baking dish with nonstick cooking spray.
- Melt butter in a medium pot over medium heat. Add flour and cook, whisking frequently, until no lumps remain, about 1 minute. Slowly whisk in milk until combined. Cook, whisking frequently, until mixture comes to a boil and thickens, about 6 to 8 minutes. Reduce heat to low and whisk in mustard until a thick sauce forms, about 1 minute. Season with salt and pepper, and remove from heat. While cooking the sauce, place the frozen pierogies in hot tap water. This will thaw them slightly until the sauce is done and help reduce cooking time.
- Spread roughly 1 cup of sauce evenly over the bottom of the prepared baking dish. Scatter half of the ham evenly over the sauce, then top with 1 cup of Gruyere cheese. Shingle pierogies evenly over Gruyere cheese and ham. Drizzle with remaining sauce. Scatter remaining ham over sauce and top with remaining Gruyere cheese.
- Bake until cheese is light golden-brown and pierogies are fully heated through, about 18 to 20 minutes. Garnish with chives and serve.
