Recipe Ingredients
- 1 (18-ounce) box InnovAsian Crispy Honey Chicken
- 8 (8.5-inch) rice paper wrappers
- 1 head bibb lettuce, leaves separated
- 2 cups packed shredded purple cabbage
- 1 cup matchstick carrots
- 1 cup fresh cilantro leaves
- 1/4 cup packed fresh mint leaves
- Thai peanut sauce, for serving
Recipe Directions
- Preheat oven to 400°F and line a rimmed baking sheet with parchment paper. Place sauce pouch from orange chicken box in bowl of warm water to thaw.
- Place orange chicken in an even layer on prepared baking sheet. Bake until fully heated through, about 17 to 19 minutes. Drizzle orange chicken sauce over chicken and bake for an additional 2 to 3 minutes, until hot.
- Fill a wide bowl with warm water. Working one at a time, dip rice paper into water for a few seconds until just softened, and then transfer to work surface. Arrange lettuce leaves on the bottom 1/3 of rice paper. Layer orange chicken, cabbage, carrots, cilantro and mint on top of lettuce. Roll rice paper over filling, rolling away from you, tucking in sides as you roll. Repeat with remaining rice paper and fillings.
- Slice summer rolls in half and serve with peanut sauce.
