Recipe Ingredients

  • 6 stalks celery, chopped
  • 3 green onions, chopped
  • 1/4 cup blue cheese dressing
  • 2 (12-ounce) bags Simek’s® Angus Beef Meatballs
  • 1 1/2 cups Buffalo sauce
  • 11 (6-inch) sub rolls, split and toasted
  • 1 cup crumbled blue cheese, for garnish, optional

Recipe Directions

  1. Combine celery, green onions and blue cheese dressing in medium bowl and toss to combine. Set aside.
  2. Combine meatballs and Buffalo sauce in a large Dutch-oven over medium heat. Simmer for 15 to 16 minutes, until fully heated through.
  3. Divide meatballs with Buffalo sauce between each roll. Top with celery mixture and garnish with blue cheese. Serve and enjoy.

Make in a slow-cooker. Simply combine meatballs and Buffalo sauce in a large slow-cooker. Cover and cook on low for 6 to 8 hours, or high for 3 to 4 hours, until meatballs are fully heated through.
