  • 1 (12 oz.) package of 24 medjool dates, pitted
  • 6 oz. ricotta cheese
  • 1 (6 oz.) bag shredded parmesan cheese
  • 6 slices applewood smoked uncured bacon; cut each slice to fit evenly around each date
  • 24 bamboo picks

Recipe Directions

  1. Pre-heat oven to 375 °F. Line (2) 13-inch x 18-inch baking sheets with aluminum foil.
  2. In a small bowl, mix cheeses to combine. Slice open one side of each date, lengthwise. Fill each date with a half-ounce spoonful of cheese mixture and close to form a seam.
  3. Wrap 1/3 of uncooked bacon slice tightly and evenly around each date, making sure to cover the open date seam completely. Secure each with a bamboo pick, keeping the bacon seam on the bottom.
  4. Place each onto prepared baking sheet (about 12 per sheet). Bake 20 to 25 minutes or until bacon is crispy on all sides. Transfer to a serving platter, keeping bamboo picks intact. Serve immediately.
