Recipe Ingredients
- 8 Grown in Idaho® Crispy Hash Brown Patties
- 1 tablespoon unsalted butter
- 8 large eggs, lightly beaten
- Kosher salt and freshly ground black pepper, to taste
- 1/2 cup shredded Mexican-style cheese
- 1/2 cup store-bought or homemade fresh tomato salsa
- 8 slices thick-cut bacon, cooked
- 1 avocado, halved pitted, peeled and sliced
Recipe Directions
- Preheat oven to 425°F and line a rimmed baking sheet with parchment paper. Bake hash brown patties according to package directions. Repeat with remaining hash browns.
- Meanwhile, melt butter in large nonstick skillet over medium-high heat. Add eggs and scramble, stirring constantly, until just set, about 30 seconds to 1 minute. Season with salt and pepper, to taste. Remove from heat.
- Top 4 hash brown patties with scrambled eggs. Top evenly with cheese, salsa, bacon, avocado and remaining hash brown patties. Serve and enjoy.
