Recipe Ingredients
- 4 ounces baby red potatoes, halved
- 1 tablespoon olive oil, divided
- 1 tablespoon Cajun seasoning, divided
- 1 (4-count) Pictsweet Farms Vegetables Air Fryer Buttered Corn
- 1/2 lb medium shrimp, peeled and deveined
- 1 (6-ounce) link andouille sausage, cut into 1/2-inch rounds
- Chopped fresh parsley, for garnish
- Lemon wedges, for serving
Recipe Directions
- Preheat air fryer to 400°F. Place potatoes and corn in an even layer into air fryer basket. Drizzle with 1 teaspoon of oil and 1 teaspoon of Cajun seasoning and shake basket to coat. Cook, shaking basket halfway through, until potatoes and corn are light golden-brown, about 10 minutes.
- Add shrimp, sausage, remaining oil and Cajun seasoning to air fryer and toss to combine. Continue to air-fry until shrimp is pink and corn and potatoes are tender, about 4 to 5 minutes. Garnish with parsley and serve with lemon wedges.
