Recipe Ingredients
- 1/2 pound baby potatoes, halved
- 4 tbsp olive oil
- Salt and pepper, to taste
- 2 (6 oz) salmon filets
- 2 cups PuraVida Fire Roasted Primavera Mistura
- Parsley, freshly chopped
Recipe Directions
- Preheat oven to 425°F. Toss potatoes with 2 tablespoons olive oil, salt, and pepper to taste. Once coated, arrange on a large sheet pan and bake in preheated oven for 20 minutes, checking halfway and giving them a shake.
- Remove the hot pan from the oven and move the potatoes to one side of the pan. Carefully arrange salmon fillets and vegetables on the sheet pan.
- Place pan back in the oven and cook for another 10-12 minutes, until vegetables are hot and salmon is cooked through. Top with chopped parsley and serve.
