Recipe Ingredients

Burritos:

  • 8 frozen bean & cheese burritos
  • 1 cup fat-free sour cream
  • 1 7-oz. can diced green chiles
  • salt & pepper, to taste
  • 1/2 tsp. lime zest
  • 2 Tbsp. lime juice
  • 1/4 tsp. cumin
  • 1/2 cup loosely packed cilantro
  • 1 1/2 cup grated Monterey Jack cheese

Corn:

  • 10-oz. pkg. frozen corn & butter
  • 1/2 red bell pepper, finely diced
  • 3 Tbsp. chopped cilantro
  • juice of 1 lime
  • salt & pepper, to taste

Recipe Directions

  • Lightly grease 9X13 glass baking dish with non-stick cooking spray. Place 8 frozen burritos into pan and microwave 8 minutes or until all burritos are hot. Preheat broiler.
  • While burritos are warming, place sour cream, green chiles, salt, pepper, lime zest, lime juice, cumin and cilantro. Pulse and then blend until smooth. Spoon generously over warm burritos. Sprinkle with cheese. Place under broiler 2-3 minutes or until cheese is melted and burritos are all warm and bubbly. Serve.
  • For the corn- microwave according to package directions. Stir in red pepper, cilantro, lime juice, salt and pepper. Serve with burritos.
