Recipe Ingredients

  • 2 tbsp cashew butter
  • 2 tbsp avocado oil
  • 3 tbsp brown sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 cup almond flour
  • ½ tbsp coconut flour
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 2 tbsp dark chocolate chips
  • ¼ cup chocolate chunks

Recipe Directions

  1. Preheat oven to 350ºF and grease a 6” mini cast iron skillet cookie.
  2. In a medium bowl mix together cashew butter and oil. Whisk in brown sugar, egg and vanilla until smooth. Add in almond flour, coconut flour, baking soda, and salt; stir until combined then fold in chocolate chips.
  3. Bake at 350ºF for 15-18 minutes, until edges are lightly golden.
  4. Sprinkle with sea salt and serve with your favorite Graeter's Ice Cream flavor!
