Recipe Ingredients

  • ¼ cup red wine vinegar
  • ½ cup olive oil
  • 1 tablespoon poppy seeds
  • 1 tablespoon Dijon mustard
  • ½ tablespoon honey, melted
  • Large pinch salt
  • 3 cups mixed salad greens
  • ⅓ cup chopped walnuts
  • ¼ cup dried cranberries
  • 1 medium pear, thinly sliced
¼ cup shaved Parmesan cheese

Recipe Directions

  • Make the dressing by combining the vinegar, olive oil, poppy seeds, Dijon mustard, honey and salt in a jar. Whisk to combine.
  • In a large bowl, combine the lettuce, walnuts, cranberries and sliced pear. Toss everything together then top with Parmesan cheese. Dress with poppy seed dressing, divide among four plates and serve.
  • Serve along side your favorite Michael Angelo’s Italian entrée!
