Recipe Ingredients

  • 1/2 cup water
  • 1 teaspoon white distilled vinegar
  • 1 large egg
  • Kosher salt and freshly ground black pepper, to taste

Recipe Directions

  1. Fill a 1-cup microwave-safe bowl or mug with water and vinegar. Crack egg into water. Cover bowl with small saucer or plastic wrap. Microwave on HIGH for 1 minute.
  2. After 1 minute, check egg white to see if it is firm. If egg white is not set, microwave for an additional 15 to 30 seconds. Remove egg from water using a slotted spoon. Season with salt and pepper, to taste. Serve as desired.

Suggested Servings

  1. Serve poached egg on a slice of sourdough toast topped with 2 tablespoons cream cheese, 2 slices of tomato and a small handful of arugula. Season with everything-but-the-bagel seasoning, salt and pepper, to taste.
