Recipe Ingredients

  • 1 cup sugar
  • 3 large eggs
  • 1 cup lemon juice
  • 1/2 cup unsalted butter, melted and cooled
  • 2 teaspoons lemon zest, optional

Recipe Directions

  1. Whisk sugar, eggs together in a large microwave-safe bowl until combined. Stir in lemon juice, butter and lemon zest until combined.
  2. Microwave on HIGH in 1-minute intervals, stirring between each interval, until lemon mixture is thick and coats the back of a wooden spoon. Pour mixture into canning jar. Cover tightly with lid and refrigerate for at least 1 hour until chilled.

TIP

Serve with biscuits, scones or pound cake served with a dollop of whipped cream and fresh mint.
