Recipe Ingredients

  • 1/2 bag Farm Rich Homestyle Meatballs
  • 1 white onion cut in half
  • 1 (4 inch) knob ginger sliced
  • 1 tbsp coriander seeds
  • 1 tsp cloves
  • 2-3 star anise
  • 1 cinnamon stick
  • 1 tbsp sugar
  • 1 tbsp fish sauce
  • 2 quarts beef broth
  • 1 package rice stick noodles
  • 1 cup spinach
  • 1 cup sliced baby portabella mushrooms
  • Basil leaves, red onions, jalapeños, bean sprouts for garnish

Recipe Directions

  1. In a pot over medium heat char onion and tomato 2-3 minutes. Add in beef broth, sugar and fish sauce and bring to a boil. Once boiling add in coriander, cloves, star anise, and cinnamon in a satchel. Lower heat to simmer and cook 25 minutes.
  2. Meanwhile cook meatballs in oven at 350° for 18 minutes and set aside.
  3. Boil noodles according to package directions. Put in bowls for serving.
  4. After 25 minutes, add mushrooms to bowl and cook 10 minutes. To serve, ladle soup over noodles and meatballs and add spinach to wilt in hot broth.
  5. Garnish with your choice of toppings and enjoy!
