Recipe Ingredients

  • 2 tablespoons unsalted butter
  • 2 cups frozen sliced peppers and onion
  • 12 large eggs, beaten
  • Kosher salt and freshly ground black pepper, to taste
  • 1/2 (23.9 oz.) bag Jimmy Dean Heat ‘n Serve Original Sausage Patties
  • 1 1/2 cups shredded pepper jack cheese
  • 6 (10-inch) flour tortillas

Recipe Directions

  1. Melt butter in large skillet over medium-high heat. Add peppers and onions and cook, stirring occasionally, until fully heated through, about 4 to 5 minutes. Add eggs and scramble, stirring constantly, until just set, about 1 minute. Season with salt and pepper, to taste. Remove from heat.
  2. Spoon egg mixture evenly along the edge of each tortilla. Place 2 to 3 sausage patties next to egg mixture. Top with a few tablespoons of cheese. Fold in sides of tortillas and roll up tightly.
  3. Wrap burritos in parchment paper. Keep frozen for up to 6 months until ready to serve.
  4. When ready to serve, place burrito on a microwave-safe plate. Using the defrost setting on the microwave, defrost burrito for about 5 minutes, then microwave on high for 1 to 2 minutes until fully heated through. Serve with sour cream and enjoy.
