Recipe Ingredients
- 1 Medium Green Pepper
- 1 Medium White Onion
- 3 Cloves Garlic
- 1 Tbs. Canola Oil
- 1 14oz. Can Stewed Tomatoes
- 1 10oz. Can Diced Tomatoes and Green Chilis
- 1 16oz. Can Kidney Beans, drained and rinsed
- 1 15oz. Can Pinto Beans, drained and rinsed
- 1 11oz. Can Whole Kernel Corn, drained
- 1 Cup Veggie Crumbles
- 2 1/2 Cups Water
- 1 Cup Uncooked Brown Rice
- 1 Tbs. Chili Powder
- 1 1/2 Tsp. Ground Cumin
- Salt & Pepper (to taste)
- Sour Cream (optional)
Recipe Directions
- Dice the green pepper and white onion. Mince the garlic cloves.
- Sauté the peppers, onions, and garlic cloves with the canola oil in your dutch oven.
- Once the onions begin to get soft, add the remaining ingredients, stir, and cover to cook for 25-30 minutes stirring occasionally. Once the chili is finished cooking, season it with salt and pepper.
- Garnish as desired with sour cream, shredded cheese, chopped avocado or jalapenos.
- Serve and enjoy!
