Recipe Ingredients

  • 1 Medium Green Pepper
  • 1 Medium White Onion
  • 3 Cloves Garlic
  • 1 Tbs. Canola Oil
  • 1 14oz. Can Stewed Tomatoes
  • 1 10oz. Can Diced Tomatoes and Green Chilis
  • 1 16oz. Can Kidney Beans, drained and rinsed
  • 1 15oz. Can Pinto Beans, drained and rinsed
  • 1 11oz. Can Whole Kernel Corn, drained
  • 1 Cup Veggie Crumbles
  • 2 1/2 Cups Water
  • 1 Cup Uncooked Brown Rice
  • 1 Tbs. Chili Powder
  • 1 1/2 Tsp. Ground Cumin
  • Salt & Pepper (to taste)
  • Sour Cream (optional)

Recipe Directions

  1. Dice the green pepper and white onion. Mince the garlic cloves.
  2. Sauté the peppers, onions, and garlic cloves with the canola oil in your dutch oven.
  3. Once the onions begin to get soft, add the remaining ingredients, stir, and cover to cook for 25-30 minutes stirring occasionally. Once the chili is finished cooking, season it with salt and pepper.
  4. Garnish as desired with sour cream, shredded cheese, chopped avocado or jalapenos.
  5. Serve and enjoy!
