  • 1 (8-pack) bag El Monterey® Shredded Steak, Cheese & Rice Burritos
  • 1 (10 oz.) can red enchilada sauce
  • 2 cups shredded cheddar cheese, or Mexican-blend cheese
  • 1 cup store-bought or homemade pico de gallo
  • Chopped fresh cilantro leaves, for garnish

Recipe Directions

  1. Preheat oven to 375°F and coat a 9x13-inch baking dish with cooking spray. Place burritos in prepared baking dish. Spoon enchilada sauce even over burritos.
  2. Sprinkle with cheese and bake until burritos are fully heated through and sauce is bubbling, about 25 minutes.
  3. Top with pico de gallo and cilantro. Serve and enjoy.
