Recipe Ingredients
- 1 (17-ounce) bag Simek's® Kids Mini Beef Meatballs
- 1/2 lemon, juiced
- 1/4 cup olive oil
- 2 teaspoons Dijon mustard
- 1 teaspoon chopped fresh oregano
- Kosher salt and freshly ground black pepper, to taste
- 2 pita pockets, cut in half
- 1/4 cup marinated quartered artichoke hearts
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese
- 1/4 cup pitted kalamata olives
- 1/4 small red onion, thinly sliced
- 1 radish, thinly sliced
- 2 tablespoons fresh mint leaves
Recipe Directions
- Preheat air-fryer to 375°F. Place meatballs in an even layer in the air-fryer basket. Cook for 7 to 8 minutes, until fully heated through.
- While meatballs are cooking, whisk lemon juice, oil, mustard and oregano together in a medium bowl until combined. Season with salt and pepper, to taste. Set aside half the lemon mixture for drizzling over pockets.
- Toss meatballs with remaining lemon mixture until coated. Fill pita pockets evenly with artichokes, tomatoes, feta, olives, onion, radish, mint and meatballs. Drizzle with reserved lemon mixture and serve.
