Recipe Ingredients

  • 1 (17-ounce) bag Simek's® Kids Mini Beef Meatballs
  • 1/2 lemon, juiced
  • 1/4 cup olive oil
  • 2 teaspoons Dijon mustard
  • 1 teaspoon chopped fresh oregano
  • Kosher salt and freshly ground black pepper, to taste
  • 2 pita pockets, cut in half
  • 1/4 cup marinated quartered artichoke hearts
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 1/4 cup pitted kalamata olives
  • 1/4 small red onion, thinly sliced
  • 1 radish, thinly sliced
  • 2 tablespoons fresh mint leaves

Recipe Directions

  1. Preheat air-fryer to 375°F. Place meatballs in an even layer in the air-fryer basket. Cook for 7 to 8 minutes, until fully heated through.
  2. While meatballs are cooking, whisk lemon juice, oil, mustard and oregano together in a medium bowl until combined. Season with salt and pepper, to taste. Set aside half the lemon mixture for drizzling over pockets.
  3. Toss meatballs with remaining lemon mixture until coated. Fill pita pockets evenly with artichokes, tomatoes, feta, olives, onion, radish, mint and meatballs. Drizzle with reserved lemon mixture and serve.
