Recipe Ingredients
- 1 (13.25-ounce) box yellow cake mix
- 2 cups vanilla Greek yogurt
- Red gel food coloring, as needed
- 1 cup shredded sweetened coconut
- 1 kiwi, peeled
- 4 strawberries, sliced into 1/8-inch rounds
- 4 purple grapes, sliced into 1/8-inch rounds
Recipe Directions
- Preheat oven to 350°F and coat a 14-inch round cake pan with nonstick cooking spray and line with a parchment paper round. Prepare cake mix according to package directions. Pour batter into prepared cake pan. Bake until a toothpick inserted into the center comes out clean, about 15 to 20 minutes. Remove from oven and allow to cool for about 10 minutes before inverting cake onto pizza pan to cool completely at room temperature.
- Meanwhile, mix yogurt and food coloring together in medium bowl, adding more food coloring, as needed, until frosting resembles the color of pizza sauce.
- Spread yogurt evenly over top of cake, leaving a 1/2-inch border to resemble a pizza crust. Sprinkle coconut over yogurt to resemble cheese on a pizza.
- Cut kiwi into thin strips to resemble green bell pepper. Place kiwi strips, strawberries and grape rounds on top of cake to resemble pizza toppings. Slice and serve.
Tip:
If you’re out of oil or milk, you can make a 1-for-1 swap by using melted butter in place of oil, or water in place of milk, when making boxed cake mix.
