- 1 cup cottage cheese
- ½ lb. shredded pepper jack cheese
- 1 egg
- 24 individual mini phyllo cups (or 12 regular phyllo cups)
Preheat the oven to 350 degrees. Mix cottage cheese, pepper jack cheese and egg together in a bowl. Fill each phyllo cup with 1-2 teaspoons of the cheese mixture. Bake for 18-20 minutes or until cheese is bubbling. Cool for 5 minutes before serving.
