Storing Cheese Properly
June Dairy Month is the perfect time to consider these storing tips, and increase the enjoyment of your favorite cheeses.
- Cheese should be kept at temperatures between 35 and 40 degrees F.
- New wrapping should be used each time a cheese is rewrapped.
- Cheese should be stored in an airtight container or plastic bag to avoid picking up aromas from other foods.
- Mold on cheese does not mean that it is spoiled. Just remove approximately 1/4" from each moldy side of the cheese.
- Cheese is best stored in the refrigerator as close to the bottom of the appliance as possible – the vegetable compartment is ideal.
- Hard cheeses keep much longer than soft cheeses.

A Cheesy Idea! |

PANINI GRILLED HERBED
CHEESE SANDWICH
4 Tbsp. butter, softened
3 Tbsp. grated Parmesan cheese
2 tsp. dried basil leaves
8 slices Italian or Sourdough bread (1/2" thick)
8 slices deli-style Cheddar Cheese
8 slices deli-style Mozzarella Cheese
8 slices deli-style Provolone Cheese
2 tomatoes, thinly sliced
Mix together butter, parmesan cheese and basil. Preheat panini pan or skillet to medium heat. To assemble each sandwich, spread the bread lightly with butter mixture, then layer with the cheese and tomato slices. Spread top and bottom of each sandwich with remaining butter. Grill for 4-5 minutes or until cheese is melted and bread is golden brown. Makes 4 sandwiches.
