Parmesan Fish Fillets:

  • 1 (11.4 oz.) pkg. Gorton’s Crunch Breaded Fish Fillets
  • 3 Tbsp. spaghetti or marinara sauce
  • 6 Tbsp. Sargento shredded mozzarella cheese
  • 1 Tbsp. grated Parmesan cheese
Italian Herb Sugar Snap Peas and Corn:
  • 1 (1-oz.) square Land O’Lakes Italian Herb Sauté Express
  • 1 (10-oz.) pkg. Bird’s Eye frozen sugar snap peas
  • 1 (10-oz.) pkg. Bird’s Eye frozen corn kernels

Recipe Directions

Parmesan Fish Fillets:
1. Preheat the oven to 425°F.  
2. Place the frozen fish fillets in a rimmed metal baking sheet.  Bake for 12 minutes, then turn the fish over and bake for 3 more minutes.  
3. Remove the tray from the oven and spoon about 2 teaspoons of sauce over the top of each fillet.  Sprinkle a tablespoon of mozzarella over the sauce, then top each with ½ teaspoon of the Parmesan.
4. Return the tray to the oven and bake for another 3 to 4 minutes, until the cheese is melted.  Serve hot.
Cooking Tips: 
  • Try other versions of breaded fish fillets, such as flounder, haddock or tilapia.
  • Sprinkle different fresh herbs on top, such as oregano, thyme or basil. Or, grab convenient frozen herbs from Daregal (find in your freezer aisle).
  • You could also put the cooked, cheesy fillets in a roll, if you wanted to make a hot Fish Parmesan Sandwich. Try pre-made, frozen rolls from Pepperidge Farm or Alexia.
Italian Herb Sugar Snap Peas and Corn:
Heat the Land O’Lakes Italian Herb Sauté Express in a large skillet over medium heat.  Turn the heat to medium high, add the sugar snap peas and the corn, and sauté for 3 minutes.  Add 2 tablespoons of water, stir, cover the pan, and allow to steam for 3 more minutes.  Remove the cover, and sauté for another minute until most of the liquid is evaporated and the vegetables are well coated with the fragrant sauce.  Serve hot.
Cooking Tip:
  • Experiment with different varieties of frozen vegetables, including blends of your favorite vegetables.
