3 cups shredded napa cabbage
3 cups shredded romaine lettuce
2 cups fully cooked lightly breaded frozen chicken breast strips, bite-sized
1 small red bell pepper, seeded and deveined, thinly sliced
1/2 cup chopped carrots
1 11 oz. can mandarin orange slices, drained
1/2 cup slivered almonds, toasted
1 Tbsp. toasted black sesame seeds
Orange Vinaigrette:
1/4 cup orange juice
2 Tbsp. balsamic vinegar
1 tsp. Dijon-style prepared mustard
2 tsp. honey
1/8 tsp. cracked black pepper
1/4 cup chow mein noodles

Recipe Directions

Heat chicken strips according to package directions. Cut strips into bite-size pieces. Combine cabbage, lettuce, red peppers, carrots, oranges, almonds and sesame seeds in large salad bowl; set aside. In a small jar with a tight-fitting cover, combine the orange juice, vinegar, mustard, honey and pepper. Cover and shake well until combined. Add the chicken to the salad; pour the dressing over the salad and toss well. Garnish with the chow mein noodles and serve.
